Sausage casserole is one of those meals you can make from store cupboard and freezer hoards. Its quite an easy meal, just chuck it together and forget about it. I’ve also made it loads of times in the slow cooker. Come home to the beautiful welcoming flavours drifting through the air.. definitely one to try!
I made this for two people and I had two huge portions left for the freezer – so serves four then…
6 – 8 good quality butchers sausages
1 jar of Passata
1 large onion
1 handful of mushrooms
3 cloves of garlic or to taste
1 red pepper, I found a green pepper looking lonely in the fridge so I chucked that in as well.
1 bay leaf
Whatever herbs you have to hand. I used a bit of turmeric, paprika, mixed herbs, oregano..
1 tsp jam or sugar
1 Square of dark chocolate if you have it, just for richness. Could use cocoa powder as well
I also added bone broth balls which are little cubes of bone broth that I freeze and add to meals to enrich them. The dog also loves them to cool down in summer!
Cut up all the veg ready for the pan.
Cut the sausages into small pieces and fry them until nice and brown. They don’t need to be cooked through as they will be cooking in the liquids later.
Once nicely browned, remove to a plate.
add the veg to the pan and fry gently until just softened. Remove these to a plate
Now add everything back to the pan including the passata and also add your seasonings.
Now give the pan a good stir and let it start to bubble. Then pop on a tight fitting lid and turn the heat down low and just leave it. I give it at least half an hour. I probably stir it every twenty minutes or so. I gave this about three hours and it came out lovely and rich.
We had it one day with wholegrain rice which was lovely. Then I put two portions in the fridge and we had that a couple of days later with buttery mash potato and roasted vegetables. Proper comfort food!
